≪卯月曇の御献立≫


◆Aperitif 食前酒

Sakura-masamune Hana-shizuku ’Aka’ (Japanese sake) 櫻正宗 花雫あか

Assorted seasonal side dish 前菜

Sakura shrimp with onion sauce 新玉葱擂り流し 桜海老とセルフィーユに胡椒

Boiled Today’s shell, usui-beans and bamboo shoot with kinome jelly

本日の貝を碓井と筍に木の芽ジュレで

Boiled shrimp and Jew’s mallow 海老モロヘイヤ寄せ、水雲とパプリカ

Grilled Today’s special fish and potato with wild rocket sauce

本日の焼魚をサラダ焼で若草ソースと共に


◆Sashimi 向付

Assorted seasonal Sashimi 本日の逸品をあしらいと共に


◆Nabe 小鍋

Shin-syoga nabe (Kobe-pork, Tajima chicken and vegetables)

新生姜鍋 神戸豚と但馬鶏に水菜に萵苣、九条葱と占地

◆Fried dish 変り鉢

Fried kamo eggplant, Tajima duck breast and vegetables 

但馬鴨と賀茂茄子の宝楽仕立て 京アスパラと万願寺


◆Teppanyaki 鉄板焼

Kobe-beef and vegetables 神戸牛 大黒占地にズッキーニと馬鈴薯 

※Please dipped in a ponzu or salt or wasabi or Yuzukosyo(Japanese spice)


◆Boiled dish 焚合

Boiled abalone, wakame(brown seaweed) and bok choy with dashi sauce

 鮑と若布、白芋茎を共地庵で


Takikomi-gohan(Today’s special), pickles and dessert

炊き込みご飯、手前漬けと季節のデザート
