◆Aperitif 食前酒

◆Appetizer 先付

Boiled Tajima chicken with green soybeans sauce  

但馬鶏白蒸 枝豆擂り流しに白芋茎と小芋


◆Assorted seasonal side dish 前菜

Cone’s Tofu  玉蜀黍豆富に陸蓮根といくら 旨出汁庵掛けて

Boiled shrimp and sweet potato 海老水晶煮を甘藷檸檬煮と共に

Boiled tomato with white wine 赤茄子の甲州煮にバジルジュレ

Boiled octopus and spaghetti squash with ume dressing

蛸と金糸瓜に白瓜を梅ドレッシングで

Wagyu-sushi 和牛鮨を山葵と塩で


◆Sashimi 向付

Assorted seasonal Sashimi 本日の逸品をあしらいと共に


◆Nabe 小鍋

Hamo-nabe (Hamo= pike conger=, tofu and vegetables) with yuzu-kosyo (spice)

※Hamo is swished in boiling water for a few second.

We recommend to mix the spice (yuzu-kosyo) in the soup.

鱧鍋 淡路産玉葱と九条葱に萵苣、若布と柿の木茸、葛切り お好みで柚子胡椒


◆Griled food 焼物

Ox tongue, eggplant, tofu and potato’s gratin

グラタン 牛タンに賀茂茄子と馬鈴薯、豆富、玉葱


◆Boiled dish  合肴

Boiled wax gourd with shark fin and ginger sauce

冬瓜のスープ煮に鱶鰭、干し海老と貝柱に茶樹茸の生姜庵と共に


◆Pickled dish 酢の物

Mozuku seaweed, abalone and tairagi shellfish 水雲 鮑、平貝と川津海老

Takikomi-gohan(Today’s special), pickles and dessert

炊き込みご飯、手前漬けと季節のデザート
