Boiled Tajima chicken with green soybeans sauce  

但馬鶏白蒸 枝豆擂り流しに白芋茎と小芋

◆Assorted seasonal side dish 前菜

Cone’s Tofu  玉蜀黍豆富に陸蓮根といくら 旨出汁庵掛けて

Boiled shrimp and sweet potato 海老水晶煮を甘藷檸檬煮と共に

Boiled tomato with white wine 赤茄子の甲州煮にバジルジュレ

Boiled octopus and spaghetti squash with ume dressing


Wagyu-sushi 和牛鮨を山葵と塩で

◆Sashimi 向付

Assorted seasonal Sashimi 本日の逸品をあしらいと共に

◆Nabe 小鍋

Hamo-nabe (Hamo= pike conger=, tofu and vegetables) with yuzu-kosyo (spice)

※Hamo is swished in boiling water for a few second.

We recommend to mix the spice (yuzu-kosyo) in the soup.
